Earl Grey Tea Cookies









Earl Grey tea, is the combination of black tea leaves with oil of bergamot, which protects our health and improves our mood, apart from being great.
So, although it seems a broken record (But is that because I like both the cookies), any recipe that falls into my hands I do and I like them all, so I'm taking advantage of all the magazines that I buy in Thermomix, on this occasion are some delicious cookies with a regustito of tea mixed with chocolate, which are luxury. Try it, are a delight.

For the cookie:
420 gr. organically grown flour Harimsa
300 gr.
butter cream
6 egg yolks 160 gr
.
sugar 100 gr.
vanilla sugar
1 jet liqueur to taste (I've put rum)
baking powder 1 on
powder a pinch of salt

cream for tea:
250 gr . grated chocolate
50 gr.
butter cream
4 bags of Earl Grey tea
100 ml.
cream 50 ml.
water 20 gr. honey

1. For the dough, mix all ingredients 30 seconds at speed 5. Remove and let stand in refrigerator.
2. As for the cream, heat and water nta, 4 minutes at 100 degrees, speed 1. Put tea bags in the bowl, cover well and let infuse for 4 to 5 minutes.
3. Remove bags, add the chocolate, honey and butter. Program 1 minute at speed 2. Pour into a greased cake pan to a medium height cm., More or less. Completely left to harden in the fridge.
4. Stretch dough into a rectangle half a cm. thick, cut into two pieces and book one. Cut squares of cream tea 2 x 2 cm. approx. Paint the surface of the first dough with a little water and dispose chocolate squares interspersed over the surface of the dough.
5. Arrange the other cookie dough on the first, a rate well by hand, as if to make ravioli. Now, cut each biscuit with a tin, leaving the filling in the center area.
6. Place on a baking tray and cook about 12 to 15 minutes in hot oven 180 degrees. Remove leaves and serves tune with a cup of tea or coffee.
